About this Product

They harvest in the early morning to preserve the fresh flavors of the fruit. They use traditional fermentation methods: a 3 day cold soak and 9-day fermentation with the Cabernet Sauvignon and other varietals fermented at approximately 85°F. The wine spent an average of 12 days on the skins and was aged 16 months in a combination of French and American oak (33% new). The wine was bottled without fining.

About Starmont

Starmont Winery and Vineyards is a Napa Valley wine producer based in the Carneros AVA (American Viticultural Area). The estate's wine range is dominated by Chardonnay and Pinot Noir, but also includes numerous Sauvignon Blanc, Merlot, Cabernet Sauvignon and Syrah-based wines. The estate grew out of the Merryvale Family of Wines brand and began with the inaugural release of the Starmont Chardonnay label in 1989. Since, Starmont have expanded and relocated from its original shared facility at St Helena to Stanly Ranch Estate in Carneros. Today, it has a total of 50 hectares (124 acres) of vineyards at this new location and has built an environmentally-friendly winery to accommodate for its increasing wine production. The Starmont winery sits in the heart of the estate and is surrounded by approximately 14ha (35 acres) of Chardonnay, 4ha (9 acres) of Pinot Noir and 2ha (4 acres) of Syrah vineyards, as well as an additional small planting of Viognier.

About California, USA

Responsible for the vast majority of American wine production, if California were a country, it would be the world’s fourth largest wine-producing nation. The state’s diverse terrain and microclimates allow for an incredible range of red wine styles, and unlike tradition-bound Europe, experimentation is more than welcome here.

California wineries range from tiny, family-owned boutiques to massive corporations, and price and production are equally varied. Plenty of inexpensive bulk wine is made in the Central Valley area, while Napa Valley is responsible for some of the world’s most prestigious and expensive “cult” wines.

About Cabernet Sauvignon

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe. Inherently high in tannins and acidity, the best bottlings of Cabernet can age beautifully for decades.

Despite the modern importance and ubiquity of Cabernet Sauvignon, it is actually a relatively young variety. In 1997, DNA profiling revealed the grape to be a spontaneous crossing of Cabernet Franc and Sauvignon Blanc which took place in 17th century southwestern France.
